I've just started to diet and am having things like:
-vegetable stir fry witha few tinned chick peas and noodles
-jacket potato with big salad and some more of the chick peas (low fat dressing if you need any)
-stuffed pepper (rice and onion stuffing) with new potatoes and plenty of green veg.
- lentil and tomato bake with mash potato and steamed veg
- butter bean and cauliflower bake topped with sliced potatoes or served on rice
- pasta with tomato sauce and cashew nuts
- lentil curry or lentil chilli
I don't use meat substitutes because i don't like them and they are highly processed. I have also almost managed to cut out cheese. Just have it as a treat along with bread at the weekends. I'd eat more tofu if I had the confidence to know what to do with it.
To be honest I haven't lost much yet but I'm the opposite to you and struggling to do enough exercise. Here are some recipes which mit help. Good luck.
