Meal Ideas full of Vitamin D

Looking for some inspiration to get my Vitamin D levels up. As low fat as possible as I'm having issues with that after having my gallbladder out.

Nothing too fancy or expensive but would be great to get some good ideas for nice healthy balanced meal or snack ideas :)

I won't give you specific recipes-but just the few foods that are high in D....They are oily fish including both fresh and tinned salmon, mackerel,and sardines.Tuna and oysters have some as do some types of mushrooms.
Also eggs,fortified foods-of which there are just a few in the UK including some cereals,and margarines. Only the fish have significant amounts.
That's why we depend on supplementation or direct sun exposure.
If you are looking for a low fat solution then a supplement might be a better way than to do it through your diet.
Milk has Vit D so for low fat go for skimmed milk. Lots of sun too so treat yourself to a nice holiday or wait until mid week when the sun is going to SHINE.
I have a feeling that much of the bit d in milk gets removed with th fat?
Milk actually has very little Vit D...and it's not fortified here in the UK.
Thought it would be all the same.
Vit d is a fat soluble vitamin, if you remove or avoid the fat, you remove/avoid the vit d
Over here skimmed milk is fortified with Vitamin D, just thought it would be the same throughout Europe.
Sardines in tomato on toasted wholemeal is one of my favourite Vit D-loaded snacks.

Smoked mackerel and rice sounds good and love tinned salmon sandwiches. Not a huge fan of tinned tuna but could incorporate it with pasta or a baked potato.

Wasn't there some bread you could get fortified with Vitamin D or am I thinking of something else?

I don't have much milk drink skimmed though mainly in coffee and tea and like it quite milky. Maybe I should find a more fortified cereal, love Special K (and Ready Brek, weetabix and branflakes with sultanas) if that is but it's sooo expensive! Currently having porridge pots I add hot water to for breakfast though maybe I could add milk instead. Maybe look for fortified cereal bars too or make my own.

I LOVE mushrooms, eat normal ones a lot! Was thinking of making some omelettes with mushroom and ham in them as heard eggs are good.

The fat thing might be an issue as my system just won't have much at all at the moment, even on meds. I'm on high dose supplements on prescription as my level is so low, trying to it up and get into good habits to keep it up :)
there are some supplements available in the market. or milk is also an great option. best is to go out in early morning sun light.
