She put them in cold oil and then heated it up. I would have thought they'd come out really greasy but apparently not.

Would you be tempted to try it?

I might do them tonight.

She's not my favourite cook.
My parents always taught me to get the oil (or dripping/lard in their case) up to the correct temperature before adding the chipped tatties. I await the outcome of your test ummmmm but I won't hold my breath.

But in Nigella's defence, her recipes do tend to work....unlike some other well known chefs I could mention (Yes, I'm talkin' about you Jamie Oliver).

I will let you know. OH has told me not to experiment with his chips and to cook them properly :-)
I like Jamie Oliver, I like his throw it in roasting tin and hope for the best approach. Nigella, to me, is like watching my aunty come on to my boyfriend at christmas.

Apparently it can take up to an hour cooking them from cold oil though
I thought that you had to heat the cooking oil up first and then add the chips. You then take them out and do not let them cool in the fat.

Really? Even in a deep fat fryer?
Question Author
Johnny, that's the conventional way.
its not supposed to go to a high temperature... iono what her method is though, Ummmm. Speaking of chips, whats the big deal with the thrice cooked chips?
Question Author
Def going to do them now, Mamy.
I didn't slice the potatoes thickly and they cooked in about 25 mins to cook through. They are lush.
Sorry that should have read they took 25 mins to cook through :)
