chicken fajitas.

You can buy a packet mix of seasoning in the supermarket, along with some tortillas, sour cream, grated cheese, guacamole, salsa, sweetcorn and lettuce - oh, and you'll need some chicken breasts one per person will easily be enough.

Simply cut the chicken into strips and fry in a little oil with the seasoning mix and some onions and peppers if you want to add veggies.

To serve, warm the tortillas, place a few strips of chicken in a tortilla, top with as many toppings as desired and then roll up and eat with your fingers!

Get the prep done before the date arrives....don't try something that takes ages to get ready while the date is waiting. Get cheffy and dress the edge of plates with a sprinkling of paprika. Dress the table - don't eat off knees. TV off, nice music on, candles, plain tablecloth/serviettes, have the table ready for arrival, simple spray of flowers.

Warmed bread to nibble. Don't plan on overeating -simple fruit dessert. Have a good coffee (filter machine ideally for ease) ready for after. Nice chocs served with coffee on a side dish are thoughtful thing for after as well - get the best you can afford, as the quality will show.

Chill a white wine, warm a red if you drink......

Keep the eating simple. Fajitas are good as you can 'help' with the eating, and not tell someone how much to eat, they can choose what they prefer etc etc. and looks colourful and 'busy'.

If you want to serve rice, cook and serve by filling a tea cup using a spoon, gently press down on the rice, and turn it upside down onto the plate to one side -tap the base to release to make a mould. Put a single parsley or coriander leaf on the rice, dress the plate as above and then get to the meal. Guacamole, refried beans, salsa etc add to the look on the table.

Quick alternative as a suggestion to fajitas -

Chicken breast rolls with cheese, bacon and sage.

Gently flatten c/breast (or pork or veal escalopes) , place thin piece mature cheddar, 1 strip smoked streaky bacon and 2 sage leaves (use purple sage for effect, a couple of spinach leaves for added colour)season and roll up, secure with cocktail stick, brown off and cook in chicken stock with little paprika for 20 mins. Remove from pan, allow to stand 5 mins, take out c/tail stick. Add creme fraiche to pan and deglaze, stirring up the bits to make a sauce. Serve with whatever side dishes - rice, etc you want.

Have nice evening.

Gordon Ramsay's Beef Wellington with some roasted veg and sauteed potatoes. Go onto 'The F Word' website via channel 4, and there is a video on there of how to do it. You can make it in advance and then cook it.. It is so simple and is really impressive... !! As you don't want mushrooms just leave them out, this will knock someone's socks off..

A half dozen oysters and a bottle of cold Chablis!

Wink wink nudge nudge! :)

Fillet steak, with a pepper sauce and two veg + potatoe/chips

Desert - A Dom Pedro - whisky.cream/Ice cream and crushed ice all whisked together and served in a large wine galss + straw.

Easy to do and not that expensive. (Check your date is not a veggy though first!)

Well the last comment of the post above is the most important of all of them !, find out what your date's preferences are before deciding what to cook.
