10oz flour, 7oz sugar, 2tsp baking powder, 3/4 cup of milk, 1 tsp salt, 2 eggs, 1tsp vanilla essence, 1tbsp butter or oil. Sift dry ingredients into a bowl, add softened butter or oil, eggs, vanilla and milk and mix quickly. (you can do half of this mix to try it out)
Thats the easy bit. To cook them I use a Tala doughnut maker (which is a sort of cone shaped gadget ... you hold it over a pan of hot fat put the mixture in the top, pull the handle and a ring of dough drops into the pan this gives you the doughnut shape). You then just fry them on both sides until they are golden brown... drain well and shake on the sugar. However you can buy another gadget which is a metal doughnut mould with a long handle ... you fill it then lower the whole thing into hot oil.
They do turn out just like the ones in the shops but you need to carefully adjust the heat of your oil ... if its too hot the outside burns and the inside stays uncooked, too cool and they just soak up the oil.
