Does anyone know how to prepare and cook Jerusalem artichokes? We have grown pounds of them and now dont know what to do with them!!!

Very, very yummy with a good, strong cheese sauce with a few little bacon rolls on top. Just don't eat too many at one time, they can have a er... loosening effect :p

Cream of carrot & artichoke soup


1lb carrot roughly chopped


2lb jerusalem artichokes, peeled and sliced


Good stock: veg or veg & chicken mixed ,try to avoid cubes.


Simmer for 1-1/2 hours. Let cool


Whizz in blender, seive, season and add cream to taste.


Serve with swirl of cream and garnish.


Freezes well.


Ooops. forgot to say, Sweat the veg out with a knob of unsalted butter, lid on for about 15-20 mins before cooking. (brings out the gorgeous taste of the artichoke)
