From the RHS: "Pruning of most orchids consists only of removing the spent flowering stems. See our individual profiles on different orchids for information on how to do this." http://apps.rhs.org.uk/advicesearch/Profile.aspx?pid=333

'Deja vu'

I was thinking about this yesterday and 'viola' the answer has arrived without me asking.
You can leave the stems alone (unless they turn brown). Quite often new stems will start to grow from along the old stem. This can eventually produce a quite stunning bushy display.
