Orthodox Jews are not allowed to cook on the Sabbath. (It's considered "work" which is forbidden on the day of rest)
Cholent is a stew that cooks slowly over a 24 hour peroid.
The Cholent is put on the stove during the evening before Sabbath.
By the time its ready (24 hours later) its suppertime on Sabbath and the meal is ready to eat - with no cooking "work" having been done by anyone during that day!
p.s. The delicious smell of Cholent bubbling away during the Sabbath day fills the house and makes ones mouth water!!
