Honey by Moby was sampled from " Sometimes " by Bessie Jones.

Aren't they listed on the inlay somewhere?

The songs and vocals that Moby sampled were from the Alan Lomax achive. These were field recordings from americas south, and a Google search will tell you more about Alan Lomas, as will the links below. There are several compilations on Amazon
