yes, once or twice for a cake when i only needed a small amount. easier and more controllable in a saucepan over a low heat on the stove.
I have an old recipe for Lemon Roulade, the filling is made in the microwave.
125g unsalted butter,2 medium eggs,250g caster sugar, finely grated rind 3 lemons, 125ml lemon juice.
using a700 watt microwave, melt the butter for 1 min. In a large bowl whisk together the rest .of the ingredients, beat in the melted butter and cook in microwave for 2 mins. Beat well and cook for another 2 mins. The curd should be thick, coating the back of a spoon.Pour into small, clean jars, seal and cool.
