if you're looking to buy a property, do you look differently on one that is marketed by more than one estate agent and, if so, why?

Although I might wonder why.
no, although I would wonder why they are wasting their money
I would think they are keen to sell and may be interested in taking an offer somewhat lower than the asking price.
I don't "look to buy a property" often enough to give it a thought.
If you agree to give sole agency to one agent for a while, they may agree to a lower fee. If they can't sell it, (say) after a couple of months, you can then offer it at a higher fee through other agents. That means that the house was not attractive to potential buyers for some time after it was first put on the market.
