Me and my sister are going to cook my Mum a nice meal tomorrow. I have a leg of lamb which I am going to roast, but don't know what to serve with it. Something simple but tasty.
Any suggestions?

Not sure what you'd like specifically, but how about nice simple crushed new potatoes with a light garlic dressing, roasted sweet potato and parsnips or oven baked carrots.
Add something crunchy and green - choose the fresh seasonal stuff like broccoli or spinach - and not the imported things but fresh and tasty local veg! - or how about a light mash of turnip and parsnip with a little cumin added to seasoning.
Wild rice goes nicely with lamb for a change - nutty flavours and loads of healthy stuff in it. Leek and onions just gently 'sweated off ' with a touch of garlic works too.
Main thing I'd suggest is keep the flavour of the lamb as the main thing to taste, and have the veg etc as sides - not to overwhelm the meat, so minimum seasoning and herns etc.
