How about a fattoush salad with cooked veg instead of the usual tomato and cucumber? Maybe with chargrilled asparagus and courgette with sumac dressing and maybe a dollop of moutabel for good measure?
That's a really good idea, 237. Won't be able to use asparagus sadly as it will be outnof season but a fattaoush type salad and moutabel, muhammara etc style meze is brilliant!
I love moutabel. It`s easy to make as well although it`s not the same without the griddle that they use in the Middle East to get that burnt taste. If I remember rightly, I slightly scorched it under the grill after roasting to get the smokey flavour.
