Quite often my local Co-op has lots of stuff left over and sell it very cheap. They currently have some really good mature cheese, but I am afraid it might go off in the fridge. Is it possible to successfully freeze cheddar ?

Yes but the texture tends to be crumblier when defrosted.
You can freeze cheese successfully if you’re planning to use it for cooking purposes.

Frozen cheese will remain safe to consume, but it will typically change texture and often become crumbly once thawed, says the National Dairy Council.
I do this often mikey.
Considering some chesses are matured for years I wouldn't worry about it going off. The reason cheese goes mouldy is because of the bacteria we transfer to it by touching it. If you keep it in its wrapper it'll be fine.

Thanks everybody ! The cheese is reduced from £3:99 to £1:39, so I shall pounce this morning ! Crumbly cheddar doesn't sound so bad !
Just to add mikey, I cut it in to portions, wrap in greaseproof then in small freezer bags & then in an outer large freezer bag.
mikey, it's perfectly edible, go pounce! :0)

Thanks to you as well Ummmm.
Re use & re use the bags mikey.
You may find with a few cheddars that after freezing, they have developed slight orange-coloured patches. These are simply accumulations of yeasts. They are totally harmless, and won't affect the flavour.
