Lactose intolerance which is quite common as well as some other inabilities to absorb sugars - fructose malabsorbtion (gut pain and upset stomach) is not unheard of - ie sugars from fruit - may also be mixed up in the query, but no relevance to creating toxins from coffee and sugars.
