I love a sprig of fresh thyme and bay some bay leaves with red meat.
It rather depends what flavour you want. Straightforward is mixed herbs or perhaps a more mediterranean 'fines herbes'. Ground black pepper, certainly, and a stock cube (I use OXO), but always use a little Worcestershire sauce and if poss a slosh of red wine.
I know it may sound odd, but adding some red pesto to whatever you normally use as a sauce will really lift it :-) even just a tablespoon full

Or you could try a mixture of stock, celery salt, paprika, majoram, carraway seed, a squeeze of lemon and a dash of chilli powder (one of my usual bung-it-stew combinations - all dried herbs)
^^^ Forgot the Bay leaf - I've even bought a Bay shrub!
I like a goulash-style beef casserole....using (smoked) paprika, caraway seed and tomato puree.

Could add 2 fresh bay leaves, sprigs of thyme and a squeeze of tomato purée, plus add chopped carrots, chopped celery and new potatoes, the potatoes 20 mins before finished.
A bit more interesting could add 2 teaspoon smoked paprika, 1 teaspoon cumin, a good sprinkle of dried oregano, garlic and a squeeze of either tomato purée or tomato passata for veg add sliced red peppers, sliced onions and chopped courgette. Finish with either chopped coriander or parsley
