I was thinking of making some meals and freezing them down so that all I have to do is defrost them the night before and heat them up as I finish work, however, I have taken some sausages (uncooked) out of the freezer and am unsure if I will be able to make a casseroll with them and then refreez it, does anyone have any ideas?

For more on marking an answer as the "Best Answer", please visit our FAQ.Cook the sausages and re-freeze without a problem. make sure any reheated meals are heated completely through. Bear in mind Walls are flogging pre-cooked sausages that can be microwaved, and there are a few ready meals like casseroles in the s/markets so the home made route is absolutely fine.
Let the casserole or whatever cool before freezing, and make up portions in individual containers so you don't defrost a whole large meal for just one serving either.

I always cook too much with the purpose of freezing individual portions for my man who finishes work in the early hours of the morning, among the things I freeze are mashed potato, cottage pie, liver and onions, sausages, bacon, beefburgers, home made fishcakes, home made pies, the list is absolutely endless, I'd be here all night if I carried on. My philosophy is if you are going to dirty a pan then fill it to it's maximum capacity, this is especially good with b.o.g.o.fs or with reduced price goods. Happy cooking. Kath.
