My neighbour has given me a recipe for Coconut Bread which she claims is wonderful. Thought I'd have a go at it today and the recipe calls for 2.5 cups of flour. She's not in so I can't check with her - it's an Australian recipe so I googled how much a cup would be equivalent to and it's 8oz. That would mean 20oz for the bread in a loaf size tin. Seems a lot of flour to me and I wonder if anyone can confirm the quantity or tell me the right amount. Also I haven't got any baking powder - can I use bicarbonate of soda instead?
The problem was that the flour and sugar were given in cup measurements but everything else was in gms or teaspoons. Anyway, it was solved by my neighbour coming back - she has a set of 4 cups which she lent me and I filled the 1 cup with flour and it was 6.5oz
