crispy chicken

everytime i cook chicken if i try to make it go all crispy on the outside its usually a bit too dry on the inside..... how do i do it so its nicely cooked inside but crispy outside?

i got the lowest dose and it says they are for people who smoke up to 20 a day.... i smoke maybe 0 - 5, if i cut them in half will they still work?
