If one stem of rose bush appears from ground with NO THORNS along the stem  (except two or three tiny ones at the bottom) does that mean it's a 'sucker' and should I remove it? If so how? Just cut off with secateurs or dig it out?

Sounds like a "sucker".  Take back the soil and cut it off at near to its base as you can.

Most likely a sucker but you can usually tell by looking at the leaves which look different to the others, or the large stem growth with no bloom.

My father-in-law informed me that suckers have 7 leaves and the hybrids have 5 leaves on a branch. He always used to rip the suckers off but we just cut them as close to the ground as possible.

Yep, sounds like suckers I you're skilful with a hoe you could give it a stab with a hoe and chop it off just below the ground or the graft point
