Can I just take a partners name off the mortgage or will I have to go through all the processes of remortgaging etc. ?

Your partner's name being 'on the mortgage' presumably means that s/he is joint owner of the property.
Taking the name off the mortgage usually means that s/he is giving or selling that share of the property to you so that you become the sole owner.
There's no way you can do that (short of fraud) without their permission and knowledge.

I will do it with his permission.
I bought my house 8 years ago. I then met him and 4 years ago we remortgaged and put him on the mortgage. The equity until that date is mine and we will split any equity after that date. At the moment we are not living together but he is paying the mortgage. I'm looking at my options and what I can do regarding the house because I don't want to move. I also don't think he would make me move. He is a very nice decent man and would put me and my children before any financial gain.
I'm just looking at ways to keep the house.
