Cauliflower cheese with bacon....served with a jacket spud and salad.
Fry an onion with bacon and mushrooms. Partially cook the cauli. Put the fried mix over the cauli in a dish, pour over some cheese sauce and put in the oven until the top is browned. Much the same as ummmm suggests.

mmmm sounds good but jacket potatoes take so long dont they and I am on a diet and the cauliflower cheese may be a bit fatty?
You can also put some slices of tomato on the top before putting in oven.
Use smaller potatoes....I NEVER use baking potatoes.

If you want to limit how much cheese sauce you use, cook the cauliflower fully...mash it and then add the cheese sauce.
Add some mustard to the cheese sauce and it will taste lovely without having to use too much cheese. Also I never make cheese sauce using butter/margarine as well as cheese. I just blend milk with cornflour with the milk in a microwave and then add the cheese, pepper (and some mustard). No need for butter!!
Hmmmm..... Interesting Lottie. I may try that...

Thank you all u r brilliant as always x
That looks yummy Ankou. I love garlic!!!
break or chop the cauli into small florets. put into an ovenproof dish or tin and sprinkle with olive oil, garlic and ground corriander and toss around till evenly coated. add salt if you want. roast at about 180 for about 25 minutes or until tender. grill the bacon and have that with it. if you have some broc, do the same as with the cauli and roast in the same way.
alternatively steam the cauli and mash it with a little low fat cheese. put into a dish and stick it in the oven or under the grill to brown the top. again, have it with grilled bacon.
both ways are low fat, high fibre and very tasty :)
put the jacet in the microwave 8 mins then in hot oven, further 10 mins, all nice and crisp outside, fluffy inside. Saves lots of time.
