Sorry, I don't follow a recipe but I use a concentrated mix called Maysan - you usually find it in fish shops and small grocery outlets as opposed to big supermarkets.
It comes in mild, medium & hot and you can use as much or as little as you like. It tastes quite like a curry you would buy from a Chinese takeaway.
I used the Patak's curry paste but only use about a table spoon for a four person portion and use a 500ml carton of passata to calm the flavour down a bit.
