butternut squash seeds should be thrown away..the squash belongs to the gourd family and the seeds are not edible..
Do pumpkins not belong to the same family?  And pumpkin seeds are edible and widely available.  I have happily been roasting and munching squash seeds for years with no ill effects....

The seeds from one or more butternut squash can be toasted in a 400 degree F oven or in the microwave on high. BTW, they should be used immediately after cutting the squash, only because storage tends to make them tough. Rinse the seeds to remove the attached firborous material, place in a covered ceramic or glass baking dish.  Drizzle with a small amount of olive oil to produce crispness.  Let cool and spinkle with a very small amount of sea salt or kosher salt.  They can be stored this way for some time.  We store ours in the refrigerator.  Although relatively high in carbohydrates, they are also high in protein as well as vitamins and minerals... Kids like them as a snack...
