I have never been a great lover of cheese, like it toasted but not like straight from the fridge, but as i got older, i find myself trying out new ones, like bavarian smoked, and ones with fruit in, and the mexicana, but i find myself addicted to feta cannot resist it, what about you?

good idea ummmm. With a few spinach leaves and cherry toms plus your favourite dressing.

Now I am feeling hungry!
they can be strong, bellazella and they can be mild....the one's I mentioned I would classify as medium - we have a delish one down here in Cornwall a goats Caerphilly equivalent, from Allet Goats farm.
A good cheddar , smoked applewood, Brie, stilton, Danish blue in fact I just love cheese.
so am I, maidup....

but first a cup of tea and a slice of homemade Vic sponge cake.... then the red wine later.....
I love cheese! Would have to be a good crumbly mature cheddar or Inkeeper's Choice or grilled halloumi. Baked camambert is gorgeous with fresh crusty bread or mushrooms to dip like a mini fondue. Brie is lovely melted with mushrooms as a sauce for steak or blue cheese or in a dressing.

Can't eat cheese with fruit in it. Not so keen on smoked cheese and like milder goats cheese or it can be a little overpowering.

When I was working in France I loved these little cheese triangles we used to have called Kiri, no one French I asked seemed to have heard of it though and we put it down to me being dense and it being La Vache Qui Rit (Laughing Cow!).

Was recounting this to a lovely guy who was over on a study break from France when having a coffee to help him and he had heard of it and managed to find some when visiting back home and brought me a stash over :)
Sounds perfect :-)
a proper strong cheddar, afterburn cheddar, or a stinky goats cheese made just down the road from where my parents live in france.

Dave.
Sorry, headwreck, I got carried away by the drooling for good cheese. :-D
I adore Roquefort.

Roquefort Papillon is the scrummiest Roquefort. It's sharp, and creamy. It needs to be out of the fridge for a day before you eat it. It's better than sex. Okay, not really, but very, very nice.

Cheddar

There's a farm in Somerset called Keen's Farm. Mrs Keens is the goddess of Cheddar making. Don't eat Keen's Cheddar until the rind is starting to eat into the cheese, and it has lots of blue veins. Gorgeous. Better than sex. No ... really!

Brie.

Brie de Meaux is my total fave. At
I love a good Stilton, room temperature of course.

I'm a big fan of french cheeses, Tomme's primarily Savoie especially plus a lot of the "mountain cheeses" from the Alps, Pyrenees etc etc. Italians and some Spanish cheeses are pretty good also.

Brie de Meaux is my total fave. At this time of year, the cows have been in the barn for the winter, eating hay instead of grass, so the new Bries have a different character from the Bries you get in the summer.

Keep it out of the fridge until it runs all over the cheese board, and you have to scoop it up. Wonderful. It's better than ...
I like any cheese, gruyere is nice, feta with black olives, caerphilly and blue cheese are favourites. Not keen on smoked cheese. Going to have some mature Cheddar on toast now I've seen this thread.
I had cheese and red cabbage sandwich for my lunch, best not eat more cheese now, as much as i'd like to.
I love all cheese...can't get enough of it. Sadly it gives me migraines but they are worth it! I think I may be slightly addicted lol
Really lovely cheese from the Pyraneese called Bethmale.

Semi-hard and nutty in flavor - very moreish!

Comes in Cow or Sheep or mixed milk form - you can get it it the supermarkets in South West France but it's the devils own job finding it here.
Haloumi is lovely grilled then dressed with sweet chili sauce - put it on some mixed leaves and it makes a lovely starter
To be honest I can't think of a cheese I don't like, mild, mature, blue vein, the specialty cheeses, I love them all some more then others but I've never come across one that I've hated
Does it count if we like cheesy jokes?

My favourite one is the one they get from the Moon. Have any of you tried this as well?
P.S Maidup. halloumi shouldn't squeak. It squeaks if it has been overcooked. It doesn't need long. It's lush marinated in olive oil, thyme, rosemary and chilli. Yum!
