Well for those interested, my Titanic night was a hit, I was shattered after it, but the food went down well.

The only disaster was I forgot to cook all the veg!!

I marinated the pigeon breast in port for 24 hours then quick fried and left it to rest, made a crouton by frying the bread in butter and placing the breast on top and put some redcurrent sauce over it.

The pea puree is just peas and mint cooked and then drained and then blended with a blender!

What do you find amusing Spikey? I'm interested. I find this menu absolutely amazing.
so far, I'm at pear lightly fried in butter, pressed into a pastry cutter and topped with something like a pea puree - would it hold its shape to serve

the pigeon sounds really good

how about you place pear slices into a small tarlet tin then roast turn out and the pears should keep the shape then spread with the puree?
Just the banter and the comments, BM, I'm not trying to take anything away from FGT achievements or anything - I found it amusing that I was critisised the other week for posting about a mixed grill some said it was a shocking amount of food for one meal where big strapping men were given one steak (either a rib-eye or a gammon) and a few sausages each - comments that had come from a person who'd prepared and served a 14 course meal, and then from comments on here, seems as though I'm still 'in the wrong' - I find it amusing. Now I really AM going to bed, night night! xx
you mean serve it as one dish rather than in portions?

I was just thinking - for all the faffing - if you serve jointed portions, it's nice to have one portioned side

..and it gets them away from dishing up with their hands ;)
is there not room for more than one chef here???

Spikey - this is a taster a menu for a special occasion. You do know what a taster menu is, don't you?
My back is fine thnx. Waiting for boozy jelly recipe, surely not boiled vodka ?
