Just been getting tea ready and wondered, do I really need to peel those big black field mushrooms? I always do. Is it strictly necessary?

any help with the mushrooms?
Been reading a few tips recently Tilly, and agree that they are tastier if just wiped with a damp kitchen roll. To make them tastier, add half or full tin of creamed mushies. Enjoy

What on earth are creamed mushies, roger?
The skin tends to be a bit tough - and if you're as old as me, it gets stuck between your teeth. But it's not poisonous.

I never peel little button mushrooms but have always peeled the big ones. Maybe it's a throwback thing to when Dad and I used to go and pick them out of the cowpats.

That's why the kitchen roll has to be damp. Did you ever pick "Blue Stalks" ? Was like the Truffel of mushrooms

No, roger, never had a blue mushroom. We only had white ones when I was little.
Damp kitchen roll to pick off any soil, tilly. I love things like Chanterelles and Pied de Moutons.....also the Portobellos - squidge of basalmic and a wee splash of maple syrup on those before the grill or a hot pan!
I don't even bother to wipe them Tills, never mind peel them

creamed mushroms are gorgeous, and really easy

gently fry some mushrooms -sliced any way you want, or not at all -in butter 'til done to your liking, add a good grind of salt and black pepper and some double cream and snuggle it all together on a very gentle simmer until it reduces a bit.And that's it

You can also fry the mushrooms with onions/shallots/garlic as you wish, and grate a bit of nutmeg over, or a pinch of mace at the end, or stir some chopped fresh parsley through, or any combination

fab glooped on toast, an alternative with a breakfast fry, use it as a sauce for steaks, chicken or pork or do a runnier version for one of the ribbon pastas

if they're shop bought, even at a farmers market (unless marked as foraged), they'll have been grown in a sterile medium so no cowpat nasties

I onl give them a rub if they're dirty otherwise they just get chopped as is.

I'm going to try some of those lovely suggestions. Tonight we are just having them grilled with olive oil and black pepper on them. Very plain I know but they will be delicious, even if I have peeled them.
