Cooking Fillet Steak

I hardly ever eat red meat but picked up some lovely fillet steaks the other day which I`m going to do tonight. I have tried cooking steak once or twice before but they`ve never been that tender or I have burnt the outside and the inside was still raw. I like them medium. I know you have to have a really hot pan, oil the steak not the pan etc but is the best way to do it by starting on a grill/pan and then finishing in the oven? I think that`s how they cook them in restaurants.

I'm a philistine, I've nuked fillet steak in the microwave to make sure it's 'cooked '.

I will be having fillet steak for dinner tomorrow cooked in butter in a frying pan. Coat both of the steaks lightly with garlic salt and place in the melted butter on a mediumish/high heat. Do not turn until meat has browned on underside (5mins) and then 5 mins on 2nd side. Should be pink in the middle. Good luck!

Put a knob of butter with a little olive oil in frying pan, allow the butter/oil to sizzle then seal all sides of the steak. Once sealed leave the steak to cook on one side for a couple of minutes, do not move it around the pan, after the underside is nicely browned turn it over and leave it alone for a further 2 minutes, when nicely browned take it out and leave it on a plate to rest. Meanwhile add a tsp of Dijon mustard and some double cream and black pepper to pan, stir till mixed and voila luvvly jubbly.
