Venison Shoulder Steaks.

Never had them before. There's conflicting info on the net. Some say shoulder can be cooked like beef steak others say that it needs long slow cooking. Any advice please?

Not sure yet. They are for during the week. We're having fish, chips and mushy peas for dinner today :-) (homemade)
It is a hard working part of the animal so I'd go for long gentle cooking.

I've got it wrong. Sorry. It's venison leg steaks, not sure if that makes a difference. It was pork shoulder we bought....doh.
Pressure cook to tenderise then casserole, any left overs will make tasty game pies/patties.
It does well in the slow cooker, if you have one. I do them for four hours on high. A cup of cooking wine makes a nice flavour.

I cooked a tester steak. The instructions on the back said to fry on med heat for 15-18 minutes so I did it for about 10. It was lovely and very tender. I think I'll do this recipe..

I've never tried venison, is it like fillet steak?
You don`t have to cook venison for very long. It is very low in fat (it`s one of the most low fat meats that you can eat). For example, if you cook it in a slow cooker, it will end up as tough as an old boot.

I think it's butchered pretty much like beef so the fillet would be pretty much the same texture as fillet steak.

It tastes similar to steak but with a slight liver type flavour. It's nice. They are on offer at Tesco at the moment. I think it was £10 for 6 steaks (he can't resist a special offer!!)
Sounds delicious. Are Bambi steaks easy to come by now then ? The only time I've cooked it must have been about 30 years ago, and I had to find a back street supplier since it didn't seem to be in the High Street shops and superstores. I wanted a saddle because the recipe stated that, but had to settle for a haunch IIRC. Cooked ok though, but I ought not have marinated in my home made elderberry wine as it was too strong; the outside turned red overnight !

Yes, you can get venison in most supermarkets these days (I remember when you could only get venison from a farmer on Exmoor but that was a long time ago) It`s a bit of an acquired taste - personally I`m not that mad on it but is it is a good alternative to beef or lamb and a lot healthier.
leg's one of the cheaper steak-type cuts, so probably better lightly cooked, it's always nice with a red wine and redcurrant sauce with some cinnamon and orange zest

If anyone is interested Tesco are doing half price beef rump joints and pork shoulder joints half price.

We only went to bring the Hudl (tablet) back and ended up spending £175 :-) The freezer is well stocked now....
I had an amazing result a month or so back - doing an online shop at Ocado, they had venison steaks reduced to £4.40 each.

Thought I'd treat myself to one, when I unpacked there were ten!! I rang them and they said I had to keep them as they cannot take back fresh food.

Bargain lol.
In my experience, there aren`t cheaper or dearer cuts of venison. The animals aren`t so farmed in a mass-produced way so there isn`t much difference in the price of the meat
it must be farmed to some extent at that price 237, for wild venison I pay around £9 a pound for casserole meat and if I ever had the money and inclination, it'd be about fifty quid a pound for red deer loin fillet
