50g each currants, raisins, sultanas and mixed peel.
50g each dried figs and glace cherries
1 piece stem ginger finely chopped, plus 1 tbsp of its syrup
25g each almonds and pecans, chopped
200g muscovado sugar
half tsp mixed spice
3 tbs whisky
2 tbs suet or cold grated butter
zest of 1 lemon
1 small unpeeled cooking apple.
Mix together all ingredients, then taste and add more whisky or spice if you think it needs it.
If not using straight away put into sterilised jars and store in cool place for up to a year.
I made mine last week and used approx half for a dozen pies, plus there is a jar full left for at least another dozen. I didn't add figs as I didn't have any!

My grandma always used to make her own mincemeat using suet, she lived alone so the many jars of this creation were given away! The stuff we got sat on a pantry shelf........ eventually after a few weeks it fermented and blew the paper lid off the jar as it erupted like a mini-volcano resulting in a sticky lava like flow of magma all over the shelf that then cascading onto the pantry floor.
