Retro, I work in 'Pro' kitchens , VERY few chefs would fry anything other than chips!. Don't let them hear you say that a grill drys food out! Always oven or grill. The kitchen I work in most often cooks 15Kg of bacon and 10Kg of sausages every morning just for breakfast! All done on trays in the oven. Hot and fast is the way to grill , it only dries food if you cook it too long with too little heat. You can't grill poor quality meat it will never be tender enough to eat.
Eddie I sure certain foods would not dry up under a grill but I prefer the taste of stuff fried in butter or a bit of olive oil -I'm not talking swimming in an inch of lard. Funny though -having watched many many programmes on cooking and watched 'celebrity' chefs on TV not one as far as I know has ever grilled (as in UK grilling) anything -they usually brown meat in a pan then sometimes finish in the oven.
