I agree, it is an irrelevant (mostly) cheffy term.
.....and I don't eat the skin.
The skin is edible, but it is a matter of personal preference.

Yuck, no. I prefer tinned salmon and never eat the skin on that!
Yes, Ive always eaten the skin from salmon fillets. Its all goodness.

I also eat the fat on pork chops, but we dont have them all that often or i would stick to the trimmed ones only.
YES YES YES I love the skin. What I do is skin the salmon before cooking. Fry the skin in olive oil till crispy. YUM YUM.
