Why ? Because obviously no one (apart from those here who are clearly pulling your leg) is going to waste (one of) the best bit of the meal. A bit like asking when you have a sausage do you eat the meat ?
I don't eat the skin but OH does.
I don't eat cow's skin or pig's skin either. I have chicken skinless. Skin is an organ I do not find enticing to eat, like brain, pancreas and alimentary canal.
Clearly opinion on skin eating is diveded. I think many who say 'no' haven't tried it crispy, I wouldn't eat it when it has been wrapped in tin foil and bunged in the oven.
I like tinned salmon too in a sandwich. Can't do smoked salmon though, too raw looking and slimy for me. I definitely prefer it cooked. Can't do sushi or rare meat either.
