Sausage Rolls

first time for me - so I have sausage meat and pastry at the ready. do I mix the sausage meat with perhaps a fine onion or any ideas please.

Yes! Add herbs finely chopped as you don't want lumpy sausage rolls. And add anything else to give flavour.

I am just out of supermarket and I should have bought sage and onion mix - would that suffice. I may go back. (Nuisance)

or maybe use what I have basil, onions, and breadcrumbs. Would that do - save me from going out again. Do think I have dried Oregano

If you like those herbs JJ,, then a little will be fine, be sure to get the onions soft and caramelised not crisp.
