I love cheesecake but it’s only me that eats it so if I buy a chilled one from a supermarket that says ‘not suitable for freezing’ would it really matter?

No
you CAN freeze anything; whether you SHOULD depends if you want it to be edible once defrosted
Texture might be a bit naff though.
You could buy frozen ones? (not easy to cut into individual portions though)
Even with already frozen ones the texture is compromised.
Next time you buy one cut a piece off and freeze. If it thaws out to your satisfaction you're in business.
been there done that. The biscuit base goes soggy and the filling goes grainy. Taste is fine but the texture is awful.
Yes, of course it matters otherwise they wouldn't tell you.
No, you can't refreeze it. It started off being frozen and got thawed to be sold to you. If you freeze it again and defrost again you risk a bout of food poisoning due to the increase in surviving bacteria.
Up to you of course.
Get individual ones (or just eat the whole big one in one go).
