The soup making season started 2 months ago .. nearly all the ingredients come from the allotment, so the soup changes as the produce comes into season. It usualy kicks off with roast tomato and pepper. Followed by Potato and leek. This years discovery has to be courgette soup, I know it sounds awful, but following a very simple recipe produces the most amazing...

Too many to choose from but I do love chicken noodle or Chinese style chicken and sweetcorn soup. I like the Morrisons fridge section chicken and sweetcorn though think they maybe changed the recipe a bit a while back and not as big a fan. I usually put some dark soy sauce in before warming it.
I like the Knorr chicken noodle packet simmer soup too Mamya. It's a bit of a comfort/sick sofa one for me, from memories of having it when unwell as a child followed by a tinned salmon sandwich.
Think my favourite one was a random find in a pub somewhere around the Brecon Beacons, it was snowing and so cold, we stopped off for a driving break in hope of warmth and food and they had the most amazing home made potato and leek soup with fresh crusty bread and butter. Best soup I've ever had.

It is so good it has taken the place of my tomato soup.
Having used up most of the small butternut squash, I am now left with 25 or so, all above 2 kilos in weight.
So now experimenting with baked squash, peppers etc.

Chicken and sweetcorn chowder:
Sweat a small/medium chopped onion in lots of butter.
Add a short pound of diced potato. Soften.
Add a serving spoon of flour to absorb fat
Add 2 pints of (preferably) home made chicken stock. Season.
Bring to boil and simmer until pots are very soft (25/30 mins).
Add half a tin (size to suit your taste) of nice crisp good quality Sweetcorn niblets.
Squash with a masher then blitz or blend.
Add as much diced/shredded chicken as you want and the other half tin of sweetcorn. Adjust seasoning.
Add milk or cream if desired to achieve consistency you like.
Heat through without boiling.
Should give 4/5 good helpings.
