Does anyone have a yummy recipe , fancied making for a change on Christmas day....

Peel the squash and cut it up.


Fry a chopped onion & two cloves of garlic until soft.


Put all this into a big pan with 2 pints of stock & salt/pepper & chilli powder (to your own taste).


Boil it & simmer for about 20-25 minutes.


I then allow it to cool and blend it.


Enjoy it & enjoy your day.

My recipe has some apple chunks too, for sweetness


and milk or cream


and I like it with curry powder


I puree it to a smooth velvety texture

Try roasting and very lightly colouring the squash/pumpkin with rind on before scraping out flesh and continuing with rest of method. I find this give a very mellow finish.
