Fresh Tomato Sauce

Had a load of tomatoes going soft, and some red onions almost on their way out, so have just made a very tasty sauce with added balsamic vinegar, salt and pepper, a bit of sugar, and a tin of chickpeas. Didn’t skin the tomatoes, just chopped them up.
It was going to be a pasta sauce but we’re just going to have it with some crusty baguette instead of pasta.
It always pleases me to use things up, especially when it turns out really tasty :)

I used my own recipe to use up very soft Italian type tomatoes and I've made sweet chili sauce and bottled it.

4 CUPS PROCESSED VERY SOFT TOMATOES
2 -3 FINELY CHOPPED LARGE CHILLIS
2 FINELY CHOPPED GARLIC CLOVES
2 CUPS WHITE SUGAR
1 TABLESPOON SALT
1 TEASPOON BLACK PEPPER
PUT THESE IN A LARGE PAN AND SLOWLY BRING TO THE BOIL STIRRING ALL THE TIME WHEN BOILING ADD:
1 CUP BALSAMIC VINEGAR
¼ CUP FRESH FINELY CHOPPED CORIANDER
1 TEASPOON HEAPED DRIED CHILI FLAKES
BRING BACK TO BOIL AND CONTINUE TO BOIL FOR 15 MINUTES MAKING SURE IT DOES NOT STICK TO THE BOTTOM OF THE PAN. TURN OFF HEAT AND LEAVE IN PAN A FURTHER 10 MINUTES, STIR AND PLACE INTO STERILISED SMALL JARS.
THIS PRODUCES A MEDIUM HEAT SAUCE THAT CAN BE MADE MILDER OR STRONGER BY ADDING MORE FRESH CHILI
