you can pickle those, I reckon its lettuce

Apart from pickled cucumbers, you can also get dried cucumber chips; aubergines come frozen or sun-dried; and freeze-dried lettuce is very popular with laboratory snails. It's also used for creating measles vaccine.

Pumpkin or Melon
..you can get tinned pumpkin...melon is a fruit not a veg
..how about marrow?...spring onions?....
...Artichokes?....celery...?
