Just wondered if adding cream/creme fraiche to soup makes any difference to how you can store it. Can I still freeze it? And does it affect how long it can be stored for in the fridge? Thanks.

It does affect the storage time if you add the cream/creme fraiche towards the end of the cooking time.

It can still go off.

Better to add it just before serving - then you can keep the soup much longer and freeze it without it seperating.

Make the soup and store without the additional cream in the fridge, and add it whilst re-heating as it will go off otherwise.


Make the soup with cream and you can freeze it, but it is better to add the cream in a swirl once you've defrosted/re-heated the frozen soup.


Treat the cream as a garnish, with chopped chives or chervil to dress, rather than a thickening agent.
