in one of the fridges at my work there is a block of cheese that is 1 year out of date.
it is cheddar that has been matured for a year before purchase, and it is completely sealed.
Will this be safe to eat? I've said no, but my mate thinks that it is just like maturing it for another year - but i'm pretty sure the maturing process is slightly more advanced than just leaving it in a fridge.
