From couple of the more sensible recipe sites.
Cut into one inch chunks, fry until crisp and set aside.
Finely shred some red cabbage, an onion and a sliced apple and stir fry until soft (about 10 mins). Add a couple of tablespoons of vegetable or chicken stock to moisten the mixture and replace the pork chunks.
Serve with mashed potato into which a teaspoon of wholegain mustard has been stirred.
