My recipe for tonight's supper calls for 3 tbs soured cream - I only have single cream in the fridge... can I just add some lemon juice to it ? will it work ??

Sour cream is fermented cream.
The fermentation produces acid to make it sour and thickens it.
You can use Creme Frechie as a substitute (and healthier option).

You can also make your own sour cream by adding one teaspoon of lemon juice to each 5 fluid ounces of fresh single cream (table cream).
