Some Indian restaurants do not do this anymore as it actually burnt a hole in somebody's stomach and the were sued.
There are some chillis that you can not handle without gloves, and some that you dip into the curry and pull straight back out again.

Some years ago in an Indian restaurant...
Me - 'I'll have the Lamb Ceylon, please'
Indian Waiter - 'Oh my God!'
Me - 'What was that?'
Indian Waiter - 'Oh nothing sir!'
I can best describe that curry as 'deafening'!
On another occasion I brought back some Habanero peppers from the Caribbean as a present for the owner of a local Indian takeaway. He refused them, saying, (and you'll have to imagine the Indian accent), 'No, no, no! I know all about these peppers. They are pure poison!'
