What filling could i put in a baked potato that will be tasty and also low in calories as I am on a diet?

Put some light philladelphia on with some lean back bacon peices that will slow the digestion and fill you up for longer.
i think you should mix some tuna mayo up put that on top with side salad and tuna bake and the way you make tuna bake is:-
one large tin of tuna in the bottom of a glass dish with a few garden peas then put half a tin of cambells mushroom soup then cover with ready salted crisps then the rest of the cambells soup on top of that topped with some more readysalted crisps and put in the oven for about 15 minutes or until crisps are amore goldern brown colour
I use a small tin of beans heated up with some chopped mushrooms and a teaspoon of curry powder/paste. Hot for me!!

vegetable chilli?
Roast veggies.....onions,tomatoes,peppers,mushrooms,courgettes,aubergines. cut into chunks...chopped garlic plus some herbs and seasoning. Toss in a bit of olive oil and roast for 35-45 min. low cal and healthy....also good on pasta or rice.
if u did pastafreaks suggestion u can make a low fat sauce to go with it. i made it the other day with cous cous, roasted veg and this sauce (except i used full fat philly). u get phillidelphia put it in a pan, slowly heat, slowly add milk until its the consistancy u want, add fresh mint, fresh lemon juice and some gated lemon zest. its really yummy, very sweet though (which is always good if ur on a diet)!!
Baked potato + cottage cheese (any variety) = marriage made in heaven.
