It is just a casing, so the mice don't get at it as it's ususally kept in cellars to mature...

Yes suzy ... the wax on Edam is like chewing a sort of gum. I like the texture.

The outer casing of Brie isn't chalk - it's a mould that forms as the cheese matures. And most people do eat it. I like it since the flavour, with its hint of ammonia, goes well with white wines, (rather than reds)....
