molly,...jacket potatoes ARE nutritious. They are full of vitamin C and fibre amongst other things. Fill with that old stand-by ,beans,...or make a chilli from soya or Quorn mince and fill the potatoes. Top with veggie cheese.Or serve with rice. Have a go at Indian vegetarian cooking.....lots of flavour and very colourful. Or almost any pasta dish,using corn pasta and non-meat sauces.
A homemade tomato or other vegetable soup.

Mediterranean food is lot, roasted vegetables (vine tomatoes, mushrooms, onions, courgettes) in olive oil, garlic couscous stuffed peppers etc...

You could do some sauteed potatoes with it.

Fruit salad for dessert, you could make it more exotic or get some sorbet and put fresh fruit into it.
Just to let you know - Quorn isn't vegan as it contains egg x
