Ingredients

900ml-1.2litres/1½ -2 pints chicken or vegetable stock
60g/2oz butter
1 onion, chopped
1 clove garlic crushed
1 tbsp extra virgin olive oil
225g/8oz risotto rice (such as Arborio, Carnaroli or Vialone Nano)
150ml/5fl oz white wine
small bunch fresh each of parsley fresh basil leaves fresh chives
1 bunch sorrell
salt and freshly ground black pepper
30g/1oz parmesan, freshly grated
