Because we are not all the same colour and being able to represent yourself as something close to what you actually look like is a good thing. Why should a black or Asian kid have to be lumbered with a Caucasian emoji and vice versa?The blanket use of blue eyes is a bit odd though.

A global company has introduced emojis that in very rough handfuls represent the worlds population. How on earth can that possibly be considered to be 'a sad indictment to the times we live in'?

Apple are a world wide company. Recently they earned more overseas than in the American market. They are particularly concerntrating on the Chinese market at the moment. So the expanded emoji set is their attempt at being more inclusive, more a global and less parochial white American
Apple's CEO, Tim Cook is gay and they take diversity very seriously.
Apple reckon that being diversity will not do them any harm financially, in fact it will help them sell more iDevices.
