Can anyone remember how to view the formula on a complete spreadsheet

If you mean that you want to see just the formulas in cells rather than the usual results, for Excel 2007, go into Tools > Options, and click Formulas under Window Options. For Excel 2010, go into Excel Options > Advanced, and click Show Formulas In Cells Instead Of Their Calculated Results. Other versions of Excel will have similar options.

Unsure what you mean. Can you not just click in the relevant cell and look at it ?
Click in the cell and look at the formula in the formula bar. If the formula bar is not visible click "View" and tick "formula bar" (this may vary slightly depending on which version of Excel you are using).

Or is it something else you're after?

shortcut for viewing formulas on spreadsheet

control + ` (key to left of numeral 1 top left)

I love shortcuts - didn't realise that one from aelmpvw, so he should get best answer!
Thanks aelmpvw- I never knew that shortcut existed for showing the formula in every cell
Might be worth adding that to get back to the original spreadsheet showing the results you press the same two keys again
